Ingredients

  • 1 can 15 oz chickpeas (garbanzo beans), drained and rinsed
  • 2 –3 tbsp vegan mayo or Greek yogurt
  • 1 tsp Dijon mustard
  • 1 celery stalk finely chopped
  • 2 tbsp red onion finely chopped
  • 1 –2 tbsp fresh parsley or cilantro, chopped
  • Salt & pepper to taste
  • 1/2 tsp garlic powder optional
  • Juice of half a lemon
  • Bread slices or sandwich rolls whole grain, sourdough, etc.
  • Optional toppings: Lettuce tomato slices, cucumber, pickles

Instructions

Mash Chickpeas

  • In a bowl, mash the chickpeas with a fork or potato masher until flaky, leaving a few chunks for texture.

Mix Ingredients

  • Add the mayo/yogurt, mustard, celery, red onion, parsley, garlic powder, lemon juice, salt, and pepper. Mix everything until well combined.

Assemble the Sandwich

  • Toast your bread slices if desired. Spread the chickpea mixture on one side, then top with lettuce, tomato, or your favorite veggies.
