Ingredients
For the Mutton Marinade:
1kgmuttongoat meat, bone-in
1cupyogurt
2tbspginger-garlic paste
1tspturmeric
1tbspred chili powder
1tbspgaram masala
1tbsplemon juice
Salt to taste
For the Rice:
3cupsbasmati rice
6cupswater
3β4 green cardamoms
4cloves
1bay leaf
1-inchcinnamon stick
Salt to taste
For the Biryani Base:
3large onionsthinly sliced
2tomatoeschopped
Β½cupmint leaves
Β½cupcoriander leaves
2β3 green chiliesslit
1tspbiryani masala
ΒΌcupghee or oil
A few strands of saffronsoaked in warm milk (optional)
2tbsprose water or kewra wateroptional
Instructions
πΈ Step 1: Marinate the Mutton
In a large bowl, mix mutton with all marinade ingredients.
Cover and refrigerate for at least 2 hours (overnight preferred).
πΈ Step 2: Cook the Rice
Boil water with whole spices and salt.
Add soaked basmati rice and cook until 70% done. Drain and set aside.
πΈ Step 3: Prepare the Biryani Masala
Heat oil or ghee in a heavy-bottomed pan.
Fry onions till golden brown. Remove half for layering.
Add tomatoes, green chilies, and marinated mutton.
Cook till mutton is tender and masala thickens.
Add mint, coriander, and biryani masala. Mix well.
πΈ Step 4: Layer and Dum Cook
In a large handi or pot, spread half the mutton mixture.
Add half of the cooked rice.
Sprinkle fried onions, saffron milk, and rose/kewra water.
Repeat layers and seal the pot with dough or tight lid.
Cook on low flame (dum) for 25β30 mins.
