Ingredients
For the Curry Base:
2tbspoil or ghee
1tspcumin seeds
1bay leaf
1-inchcinnamon stick
1onionfinely chopped
1tbspginger-garlic paste
2tomatoespureed
10–12 baby cornsliced diagonally and parboiled
¼cupfresh creamor cashew paste for vegan version
1tbspkasuri methidried fenugreek leaves
Salt to taste
Fresh coriander leaves for garnish
Spices:
½tspturmeric powder
1tspred chili powder
1tspcoriander powder
½tspcumin powder
½tspgaram masala
Instructions
Step 1: Prep the Baby Corn
Wash and slice baby corn.
Boil in salted water for 5–7 minutes or until slightly tender. Drain and set aside.
Step 2: Make the Masala Gravy
Heat oil or ghee in a pan. Add cumin seeds, bay leaf, and cinnamon. Let them splutter.
Add chopped onions. Sauté until golden brown.
Add ginger-garlic paste and sauté till the raw smell disappears.
Add pureed tomatoes and cook until oil starts to separate.
Step 3: Add Spices & Baby Corn
Mix in turmeric, red chili, cumin, coriander powder, and salt. Cook for 1–2 minutes.
Add the boiled baby corn and toss to coat in the masala.
Add ¼ cup water and simmer for 5–7 minutes on low heat.
Step 4: Finish with Cream & Garnish
Stir in fresh cream (or cashew paste). Cook for another 2–3 minutes.
Add garam masala and crushed kasuri methi. Mix well.
Garnish with chopped coriander leaves and turn off the heat.
