Ingredients

Base:

  • 2 cups cooked basmati rice cold or leftover works best
  • 2 tbsp oil preferably sesame or vegetable oil
  • 1 tbsp garlic finely chopped
  • 1 tbsp ginger finely chopped
  • 2 –3 green chilies slit or chopped
  • 1 onion sliced
  • ¼ cup carrot finely chopped
  • ¼ cup capsicum bell pepper, chopped
  • ¼ cup cabbage shredded
  • ¼ cup spring onions chopped (white and green parts separated)

Sauces:

  • 2 tbsp Schezwan sauce
  • 1 tbsp soy sauce
  • 1 tsp vinegar
  • ½ tsp black pepper powder
  • Salt to taste

Instructions

Step 1: Prep and Sauté Veggies

  • Heat oil in a wok or large pan over high heat.
  • Add garlic, ginger, green chilies – stir fry for 30 seconds.
  • Add onions and cook until slightly translucent.
  • Toss in carrots, capsicum, and cabbage. Stir-fry for 2–3 minutes on high heat (keep them crunchy).

Step 2: Add Sauces and Rice

  • Add Schezwan sauce, soy sauce, vinegar, black pepper, and salt. Mix well.
  • Add the cooked rice and stir gently so the grains don’t break.
  • Stir-fry for 2–3 minutes until everything is well combined and heated through.
  • Step 3: Garnish and Serve
  • Turn off heat and add spring onion greens.
  • Serve hot with extra Schezwan sauce or Manchurian on the side.
