Ingredients

For the Roast Cabbage:

  • 1 medium green cabbage cut into thick wedges (leave core intact)
  • 2 –3 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp chili flakes optional
  • Salt & pepper to taste

For the Tomato Lentils:

  • 1 cup brown or green lentils rinsed
  • 1 tbsp olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 can 400g chopped tomatoes
  • 1 tsp dried oregano
  • ½ tsp thyme or Italian seasoning
  • Salt and pepper to taste
  • 2 cups vegetable broth or water
  • 1 tsp balsamic vinegar for depth

Instructions

Step 1: Roast the Cabbage

  • Preheat oven to 200°C (390°F).
  • Place cabbage wedges on a lined baking sheet.
  • Drizzle with olive oil, sprinkle with seasoning, salt, and pepper.
  • Roast for 25–30 minutes, flipping halfway, until crispy and browned on the edges.

Step 2: Prepare the Tomato Lentils

  • In a pan, heat olive oil. Add onions and sauté until translucent.
  • Add garlic and cook for 1 more minute.
  • Stir in chopped tomatoes, lentils, herbs, salt, and broth.
  • Cover and simmer for 25–30 minutes, or until lentils are tender.
  • Stir in balsamic vinegar at the end and adjust seasoning.

🍽 To Serve

  • Spoon lentils onto a plate or shallow bowl
  • Top with roasted cabbage wedges
  • Drizzle with a little more olive oil
  • Garnish with fresh basil or parsley
