Ingredients
For the Curry Base:
4–6 boiled eggs
2tbspoil or ghee
1tspcumin seeds
1large onionfinely chopped
1tspginger-garlic paste
2medium tomatoesfinely chopped
1–2 green chiliesslit
1tspred chili powder
1tspcoriander powder
½tspturmeric powder
1tspgaram masala
Salt to taste
½cupwateradjust to desired consistency
For Garnish:
Fresh coriander leaveschopped
1tspkasuri methioptional
Squeeze of lemon juice
Instructions
Step 1: Prep the Eggs
Boil eggs, peel them, and make small slits for masala to soak in.
Optional: Lightly fry the eggs in oil with a pinch of turmeric and salt for golden skin and extra flavor.
Step 2: Make the Masala
Heat oil in a pan. Add cumin seeds and let them splutter.
Add chopped onions and sauté until golden brown.
Add ginger-garlic paste and green chilies. Cook until raw smell disappears.
Add chopped tomatoes and cook until soft and oil starts to separate.
Add all powdered spices and salt. Mix well and sauté for 2 minutes.
Step 3: Cook the Curry
Add water to the masala base and bring to a boil.
Gently place the boiled eggs in the gravy.
Simmer for 5–7 minutes so the eggs absorb the flavor.
Crush kasuri methi between palms and add at the end (optional).
Garnish with coriander leaves and a splash of lemon juice.
