🌟 Introduction

Ingredients

Vegetables & Base:

  • 200 –250g button mushrooms cleaned & sliced
  • 1 large onion finely chopped
  • 2 tomatoes pureed
  • 1 tbsp ginger-garlic paste
  • 1 –2 green chilies slit
  • 2 tbsp oil or ghee
  • 1 tbsp cream or 2 tbsp cashew paste optional
  • Fresh coriander leaves for garnish

Spices:

  • ½ tsp cumin seeds
  • ¼ tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • Salt to taste

Instructions

Step 1: Prep the Mushrooms

  • Clean mushrooms gently using a damp cloth or rinse briefly.
  • Slice them evenly. Avoid soaking them in water for too long as they absorb moisture.

Step 2: Sauté Onions & Tomatoes

  • Heat oil in a pan. Add cumin seeds and let them splutter.
  • Add chopped onions and sauté until golden brown.
  • Stir in ginger-garlic paste and green chilies. Cook until raw smell disappears.
  • Add tomato puree and cook until oil starts to separate from the masala.

Step 3: Spice It Up

  • Add turmeric, chili powder, coriander powder, and salt. Mix well.
  • Sauté this masala base for 4–5 minutes for a rich flavor.

Step 4: Add Mushrooms & Simmer

  • Add sliced mushrooms to the masala. Stir well.
  • Mushrooms will release water — cook until they are tender and water reduces.
  • Add a splash of water if needed to adjust gravy consistency.

Step 5: Finish & Garnish

  • Stir in cream or cashew paste (optional) for a rich texture.
  • Add garam masala and mix.
  • Simmer for 2–3 minutes.
  • Garnish with fresh coriander leaves.
