Ingredients
Vegetables & Base:
200–250g button mushroomscleaned & sliced
1large onionfinely chopped
2tomatoespureed
1tbspginger-garlic paste
1–2 green chiliesslit
2tbspoil or ghee
1tbspcream or 2 tbsp cashew pasteoptional
Fresh coriander leaves for garnish
Spices:
½tspcumin seeds
¼tspturmeric powder
1tspred chili powder
1tspcoriander powder
½tspgaram masala

Instructions
Step 1: Prep the Mushrooms
Clean mushrooms gently using a damp cloth or rinse briefly.
Slice them evenly. Avoid soaking them in water for too long as they absorb moisture.
Step 2: Sauté Onions & Tomatoes
Heat oil in a pan. Add cumin seeds and let them splutter.
Add chopped onions and sauté until golden brown.
Stir in ginger-garlic paste and green chilies. Cook until raw smell disappears.
Add tomato puree and cook until oil starts to separate from the masala.
Step 3: Spice It Up
Add turmeric, chili powder, coriander powder, and salt. Mix well.
Sauté this masala base for 4–5 minutes for a rich flavor.
Step 4: Add Mushrooms & Simmer
Add sliced mushrooms to the masala. Stir well.
Mushrooms will release water — cook until they are tender and water reduces.
Add a splash of water if needed to adjust gravy consistency.
Step 5: Finish & Garnish
Stir in cream or cashew paste (optional) for a rich texture.
Add garam masala and mix.
Simmer for 2–3 minutes.
Garnish with fresh coriander leaves.
