🌟 Introduction
Rava Appe (also known as Rava Paniyaram or Sooji Appe) is a delightful South Indian snack made from semolina (rava/sooji), yogurt, and finely chopped vegetables. Crispy on the outside and soft inside, these bite-sized dumplings are cooked in an appe pan (paniyaram pan) using very little oil, making them a healthy and delicious treat.
This Special Rava Appe recipe adds extra flavor with spices and herbs, making it perfect for breakfast, evening snacks, or even kids’ tiffin boxes.

Ingredients

Batter:

  • 1 cup rava semolina/sooji
  • ½ cup curd yogurt
  • ¼ to ½ cup water adjust for batter consistency
  • Salt to taste
  • ½ tsp fruit salt ENO or ¼ tsp baking soda

Vegetables (customizable):

  • ¼ cup grated carrot
  • ¼ cup finely chopped onions
  • ¼ cup finely chopped capsicum
  • 1 green chili finely chopped (optional)
  • 1 tbsp chopped coriander leaves
  • 1 tsp grated ginger

Tempering (Optional but Recommended):

  • 1 tsp oil
  • ½ tsp mustard seeds
  • ½ tsp urad dal
  • A few curry leaves

Instructions

Step 1: Prepare the Batter

  • In a mixing bowl, add rava, curd, and water. Mix well to make a thick batter.
  • Add chopped veggies, salt, and mix again.
  • Let the batter rest for 10–15 minutes.

Step 2: Add Tempering (Optional)

  • Heat 1 tsp oil in a small pan, add mustard seeds and let them splutter.
  • Add urad dal and curry leaves.
  • Pour this tempering into the batter and mix well.

Step 3: Cook the Appe

  • Just before making appe, add ENO or baking soda to the batter and mix gently.
  • Heat an appe pan and grease each cavity with a drop of oil.
  • Pour batter into each cavity till ¾ full.
  • Cover and cook on low-medium flame for 3–4 minutes.
  • Flip using a skewer or spoon and cook the other side until golden brown.

  • Serve hot with coconut chutney, tomato chutney, or mint-coriander chutney.
  • Enjoy with sambar for a complete South Indian breakfast.
  • Ideal as a lunchbox or tea-time snack.

💡 Tips & Variations

  • You can add grated beetroot, boiled corn, or paneer for variation.
  • For a spicy twist, mix in red chili flakes or black pepper.
  • Don’t overmix after adding ENO to keep the appe fluffy.
