Ingredients

For the Dough (or use ready-made base):

  • 2 cups all-purpose flour maida
  • 1 tsp instant yeast
  • 1 tsp sugar
  • ½ tsp salt
  • 1 tbsp olive oil
  • Warm water as needed

For Peri Peri Sauce (or store-bought):

  • 2 tbsp mayonnaise
  • 1 tbsp chili flakes
  • 1 tbsp smoked paprika or Kashmiri chili powder
  • 1 tbsp garlic paste
  • 1 tsp vinegar
  • 1 tsp lemon juice
  • Salt to taste

Toppings:

  • ½ cup grated mozzarella cheese
  • ¼ cup cheddar cheese optional
  • ½ onion sliced
  • ½ capsicum red or green, sliced
  • Sweet corn or jalapeños optional
  • Cooked peri peri chicken or paneer optional
  • Extra peri peri sauce for drizzle
  • Oregano & chili flakes to season

Instructions

Step 1: Prepare the Dough (skip if using readymade base)

  • Mix yeast, sugar, and warm water. Let it froth for 5–10 minutes.
  • Add flour, salt, olive oil. Knead to a soft dough.
  • Cover and let it rise for 1–1.5 hours until doubled.
  • Punch down and roll into a pizza base.

Step 2: Make Peri Peri Sauce

  • Mix mayo, chili flakes, paprika, garlic paste, vinegar, lemon juice, and salt.
  • Adjust heat level to taste.
  • You can also use Nando’s peri peri sauce as a shortcut.

Step 3: Assemble the Pizza

  • Preheat oven to 220°C (430°F).
  • Spread peri peri sauce generously on the base.
  • Add cheese, toppings of choice, and more cheese on top.
  • Drizzle some extra peri peri sauce or mayo.

Step 4: Bake

  • Bake in a preheated oven for 12–15 minutes until crust is golden and cheese is bubbly.
  • Garnish with oregano and chili flakes. Slice & serve hot!
