Ingredients

Dry:

  • 1 ½ cups whole wheat flour or oat flour for extra fiber
  • 2 tbsp ground flaxseed
  • 2 tbsp coconut sugar or brown sugar
  • 1 tbsp baking powder
  • ½ tsp cinnamon
  • Pinch of salt

Wet:

  • 1 ¼ cups unsweetened plant milk almond, soy, or oat
  • 1 ripe banana or ¼ cup unsweetened applesauce
  • 2 tbsp peanut butter or almond butter
  • 1 tsp vanilla extract
  • 1 tbsp apple cider vinegar or lemon juice

Optional Add-Ins:

  • Vegan chocolate chips
  • Crumbled vegan sausage or tempeh bacon
  • Chopped walnuts or pecans
  • Blueberries

Instructions

Prepare Flax Egg: Mix flaxseed with 6 tbsp water and set aside to thicken.

    In a large bowl, whisk together all dry ingredients.

      In another bowl, mash the banana and mix in all wet ingredients (including flax egg).

        Combine wet and dry mixtures until smooth. Let batter rest 5–10 mins for fluffier pancakes.

          Heat a griddle or non-stick skillet over medium heat. Lightly grease.

            Pour about ½ cup batter for each pancake. Cook until bubbles form and edges look set, about 2–3 mins. Flip and cook another 2–3 mins.

              Keep warm in the oven until all are ready.
