Ingredients
For Marination:
- 800 g mutton bone-in
- 1 cup thick curd yogurt
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste
For Tawa Roast:
- 4 tbsp mustard oil or ghee
- 2 medium onions thinly sliced
- 1 tsp fennel seeds
- 1 tsp coriander seeds crushed
- 1 tsp black peppercorns crushed
- 2 green chilies slit
- 1 tbsp lime juice
- 1 tsp garam masala
- Fresh coriander leaves chopped
Instructions
🔸 Step 1: Marinate the Mutton
- Mix mutton with curd, ginger-garlic paste, turmeric, red chili powder, and salt.
- Let it marinate for 2–3 hours, or overnight for best results.
🔸 Step 2: Boil the Mutton
- Pressure cook or slow-cook the marinated mutton with a little water until it is 90% cooked. Reserve the broth.
🔸 Step 3: Tawa Searing
- Heat mustard oil on a large flat tawa or pan. Add crushed fennel, coriander seeds, and peppercorns.
- Add sliced onions and green chilies. Sauté until golden brown.
- Add boiled mutton pieces and roast them on medium-high flame, letting the surface char slightly.
- Spoon in a little of the reserved broth and cook until the mutton absorbs all flavors and becomes crispy yet moist.

- Sprinkle garam masala and drizzle lime juice. Toss everything together.
