Ingredients

For the Mutton Marinade:

  • 1 kg mutton goat meat, bone-in
  • 1 cup yogurt
  • 2 tbsp ginger-garlic paste
  • 1 tsp turmeric
  • 1 tbsp red chili powder
  • 1 tbsp garam masala
  • 1 tbsp lemon juice
  • Salt to taste

For the Rice:

  • 3 cups basmati rice
  • 6 cups water
  • 3 –4 green cardamoms
  • 4 cloves
  • 1 bay leaf
  • 1- inch cinnamon stick
  • Salt to taste

For the Biryani Base:

  • 3 large onions thinly sliced
  • 2 tomatoes chopped
  • Β½ cup mint leaves
  • Β½ cup coriander leaves
  • 2 –3 green chilies slit
  • 1 tsp biryani masala
  • ΒΌ cup ghee or oil
  • A few strands of saffron soaked in warm milk (optional)
  • 2 tbsp rose water or kewra water optional

Instructions

  • In a large bowl, mix mutton with all marinade ingredients.
  • Cover and refrigerate for at least 2 hours (overnight preferred).

  • Boil water with whole spices and salt.
  • Add soaked basmati rice and cook until 70% done. Drain and set aside.
