Ingredients
Base:
- 2 cups cooked basmati rice cold or leftover works best
- 2 tbsp oil preferably sesame or vegetable oil
- 1 tbsp garlic finely chopped
- 1 tbsp ginger finely chopped
- 2 β3 green chilies slit or chopped
- 1 onion sliced
- ΒΌ cup carrot finely chopped
- ΒΌ cup capsicum bell pepper, chopped
- ΒΌ cup cabbage shredded
- ΒΌ cup spring onions chopped (white and green parts separated)
Sauces:
- 2 tbsp Schezwan sauce
- 1 tbsp soy sauce
- 1 tsp vinegar
- Β½ tsp black pepper powder
- Salt to taste
Instructions
Step 1: Prep and SautΓ© Veggies
- Heat oil in a wok or large pan over high heat.
- Add garlic, ginger, green chilies β stir fry for 30 seconds.
- Add onions and cook until slightly translucent.
- Toss in carrots, capsicum, and cabbage. Stir-fry for 2β3 minutes on high heat (keep them crunchy).
Step 2: Add Sauces and Rice
- Add Schezwan sauce, soy sauce, vinegar, black pepper, and salt. Mix well.
- Add the cooked rice and stir gently so the grains donβt break.
- Stir-fry for 2β3 minutes until everything is well combined and heated through.
- Step 3: Garnish and Serve
- Turn off heat and add spring onion greens.
