Ingredients
Batter:
- 1 cup rava semolina/sooji
- ½ cup curd yogurt
- ¼ to ½ cup water adjust for batter consistency
- Salt to taste
- ½ tsp fruit salt ENO or ¼ tsp baking soda
Vegetables (customizable):
- ¼ cup grated carrot
- ¼ cup finely chopped onions
- ¼ cup finely chopped capsicum
- 1 green chili finely chopped (optional)
- 1 tbsp chopped coriander leaves
- 1 tsp grated ginger
Tempering (Optional but Recommended):
- 1 tsp oil
- ½ tsp mustard seeds
- ½ tsp urad dal
- A few curry leaves
Instructions
Step 1: Prepare the Batter
- In a mixing bowl, add rava, curd, and water. Mix well to make a thick batter.
- Add chopped veggies, salt, and mix again.
- Let the batter rest for 10–15 minutes.
Step 2: Add Tempering (Optional)
- Heat 1 tsp oil in a small pan, add mustard seeds and let them splutter.
- Add urad dal and curry leaves.
- Pour this tempering into the batter and mix well.
Step 3: Cook the Appe
- Just before making appe, add ENO or baking soda to the batter and mix gently.
- Heat an appe pan and grease each cavity with a drop of oil.
- Pour batter into each cavity till ¾ full.
- Cover and cook on low-medium flame for 3–4 minutes.
- Flip using a skewer or spoon and cook the other side until golden brown.
