Ingredients
For the Dough (or use ready-made base):
- 2 cups all-purpose flour maida
- 1 tsp instant yeast
- 1 tsp sugar
- Β½ tsp salt
- 1 tbsp olive oil
- Warm water as needed
For Peri Peri Sauce (or store-bought):
- 2 tbsp mayonnaise
- 1 tbsp chili flakes
- 1 tbsp smoked paprika or Kashmiri chili powder
- 1 tbsp garlic paste
- 1 tsp vinegar
- 1 tsp lemon juice
- Salt to taste
Toppings:
- Β½ cup grated mozzarella cheese
- ΒΌ cup cheddar cheese optional
- Β½ onion sliced
- Β½ capsicum red or green, sliced
- Sweet corn or jalapeΓ±os optional
- Cooked peri peri chicken or paneer optional
- Extra peri peri sauce for drizzle
- Oregano & chili flakes to season
Instructions
Step 1: Prepare the Dough (skip if using readymade base)
- Mix yeast, sugar, and warm water. Let it froth for 5β10 minutes.
- Add flour, salt, olive oil. Knead to a soft dough.
- Cover and let it rise for 1β1.5 hours until doubled.
- Punch down and roll into a pizza base.
Step 2: Make Peri Peri Sauce
- Mix mayo, chili flakes, paprika, garlic paste, vinegar, lemon juice, and salt.
- Adjust heat level to taste.
- You can also use Nandoβs peri peri sauce as a shortcut.
Step 3: Assemble the Pizza
- Preheat oven to 220Β°C (430Β°F).
- Spread peri peri sauce generously on the base.
- Add cheese, toppings of choice, and more cheese on top.
- Drizzle some extra peri peri sauce or mayo.
Step 4: Bake
- Bake in a preheated oven for 12β15 minutes until crust is golden and cheese is bubbly.
- Garnish with oregano and chili flakes. Slice & serve hot!
