Instructions

  • In a large bowl, combine mashed potatoes, flaked haddock, chopped chorizo, grated cheddar, parsley, mustard, salt, and pepper. Mix well until evenly combined.

Shape the Croquettes:

  • Roll the mixture into small logs or round balls—about the size of a golf ball. Chill for 15–20 minutes to firm up.

Coat for Crunch:

  • Roll each croquette in flour, dip into beaten egg, and then coat with breadcrumbs. For extra crunch, double-dip in egg and breadcrumbs.

Fry to Perfection:
