A Skillet Full of Love for Dad

Juicy chicken meatballs simmered in a flavorful tomato sauce, all in one skillet, makes this the perfect showstopper for a family celebration.

For the Meatballs:

  • 500 g ground chicken
  • 1 small onion (grated)
  • 2 garlic cloves (minced)
  • ½ cup breadcrumbs
  • 1 egg
  • 2 tbsp fresh parsley (chopped)
  • 1 tsp dried oregano
  • Salt & pepper to taste
  • 2 tbsp grated parmesan (optional)

For the Skillet Sauce:

  • 2 tbsp olive oil
  • 2 –3 garlic cloves (sliced)
  • 1 can (400g crushed tomatoes)
  • 1 tbsp tomato paste
  • ½ tsp chili flakes (optional)
  • 1 tsp sugar
  • Salt & pepper to taste
  • Fresh basil or parsley for garnish
  • Extra parmesan or shredded mozzarella (for topping)

Make the Meatballs:

  1. In a large bowl, mix ground chicken, grated onion, garlic, breadcrumbs, egg, herbs, and seasonings. Form into small meatballs using damp hands. You should get about 16–18 meatballs.

Brown the Meatballs:

  1. Heat 1 tbsp olive oil in a large skillet over medium heat. Brown the meatballs on all sides until golden (they don’t need to be fully cooked yet). Remove and set aside.

Prepare the Sauce:

  1. In the same skillet, add another tablespoon of oil. Sauté garlic until fragrant, then add tomato paste and stir for 1 minute. Pour in crushed tomatoes, sugar, chili flakes, salt, and pepper. Simmer for 5–7 minutes.

Simmer Together:

  1. Nestle the browned meatballs back into the sauce. Cover and simmer for 10–12 minutes, or until meatballs are fully cooked through.

Cheese It Up (Optional):

  1. Sprinkle mozzarella or parmesan on top and broil for 2–3 minutes until bubbly and golden.

Garnish & Serve:

  1. Top with fresh herbs and serve hot — straight from the skillet!
