Ingredients
- For the Kebab Mixture:
- 500 g minced mutton keema, preferably with a little fat
- 1 onion finely chopped
- 1 tbsp ginger-garlic paste
- 2 green chilies finely chopped
- 2 tbsp fresh coriander leaves chopped
- 1 tsp garam masala
- 1 tsp cumin powder
- ½ tsp coriander powder
- ½ tsp red chili powder
- 1 tsp chaat masala
- Salt to taste
- 1 slice of bread soaked in 2 tbsp milk
- 1 egg for binding
- 1 tbsp lemon juice
- 1 tsp ghee optional – adds richness
For Cooking:
- Ghee or oil for shallow frying
- Skewers for grilling or pan
Instructions
🔸 Step 1: Prepare the Mixture
- In a large bowl, mix the minced mutton with all the ingredients.
- Squeeze out excess milk from bread and add it as a binder.
- Mix thoroughly using your hands until smooth and well combined.
- Let the mixture rest in the refrigerator for 30 minutes (optional for best texture).
🔸 Step 2: Shape the Kebabs
- Take small portions of the mixture and shape into flat round patties or cylindrical kebabs.
- If using skewers, mold the mixture around them.
🔸 Step 3: Cook the Kebabs
- Pan Method: Heat oil or ghee in a non-stick pan. Shallow fry kebabs on medium heat for 4–5 minutes per side until golden brown.
- Grill Method: Preheat grill and cook kebabs for 10–12 minutes, turning occasionally, basting with ghee.
🍽 Serving Suggestions
- Serve hot with green chutney, sliced onions, and lemon wedges.
- Pair with rumali roti, naan, or enjoy with pulao.
💡 Tips & Tricks
- Use coarse mince (not paste-like) for a meatier texture.
- Add smoked flavor by placing a piece of hot charcoal in a bowl inside the mixture, add ghee on top, cover for 2–3 minutes.
- Don’t overcook, or kebabs will dry out.
