Ingredients
- 200 g smoked haddock fillet
- 100 g spicy chorizo finely chopped
- 100 g sharp cheddar cheese grated
- 400 g mashed potatoes firm, not too creamy
- 2 tbsp fresh parsley chopped
- 1 tsp Dijon mustard optional
- Salt & pepper to taste
- 1 egg beaten
- 100 g plain flour
- 100 g breadcrumbs panko for extra crunch
- Oil for deep frying
Instructions
Poach the Haddock:
- Simmer the smoked haddock gently in milk or water for 5–6 minutes until cooked. Drain, let cool, then flake into small pieces, removing skin and bones.
Mix the Filling:
- In a large bowl, combine mashed potatoes, flaked haddock, chopped chorizo, grated cheddar, parsley, mustard, salt, and pepper. Mix well until evenly combined.
Shape the Croquettes:
- Roll the mixture into small logs or round balls—about the size of a golf ball. Chill for 15–20 minutes to firm up.
Coat for Crunch:
- Roll each croquette in flour, dip into beaten egg, and then coat with breadcrumbs. For extra crunch, double-dip in egg and breadcrumbs.
Fry to Perfection:
- Heat oil in a deep pan (about 170°C / 340°F). Fry the croquettes in batches until golden brown and crisp—about 3–4 minutes per batch. Drain on paper towels.
