Ingredients

For the Koftas:

  • 1 cup grated cabbage
  • 1 cup grated carrot
  • ½ cup boiled mashed potatoes
  • 2 tbsp corn flour or besan
  • 1 tsp ginger paste
  • 1 chopped green chili
  • Salt to taste
  • ½ tsp garam masala
  • Oil for deep frying or shallow frying

For the Gravy:

  • 2 tbsp oil or butter
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 1 inch cinnamon
  • 2 –3 cloves
  • 2 onions chopped
  • 2 tomatoes pureed
  • 1 tsp ginger-garlic paste
  • 1 tsp red chili powder
  • ½ tsp turmeric
  • 1 tsp coriander powder
  • Salt to taste
  • ¼ cup fresh cream or cashew paste
  • ½ tsp kasuri methi crushed
  • Fresh coriander leaves for garnish

Instructions

Step 1: Prepare the Koftas

  • Mix all the kofta ingredients in a bowl.
  • Shape into small round balls.
  • Heat oil and fry koftas until golden brown and crisp.
  • Remove and keep on a tissue to drain excess oil.

Step 2: Make the Gravy

  • Heat oil in a pan. Add cumin seeds, bay leaf, cinnamon, and cloves.
  • Add chopped onions and sauté till golden brown.
  • Add ginger-garlic paste and cook until the raw smell disappears.
  • Add turmeric, red chili, coriander powder, and tomato puree. Cook until oil separates.
  • Add cream (or cashew paste) and salt. Cook for 2-3 minutes.

Step 3: Assemble the Dish

  • Just before serving, place the koftas in a bowl and pour the hot gravy over them.
  • Garnish with fresh coriander and a swirl of cream.
