Ingredients
Vegetables (customizable):
- Β½ cup carrot chopped
- Β½ cup beans chopped
- Β½ cup capsicum chopped
- Β½ cup cauliflower small florets
- ΒΌ cup green peas
- Β½ cup potato diced
- Β½ cup paneer cubes optional
- 2 tbsp oil or ghee for cooking
For the gravy:
- 1 large onion finely chopped
- 2 medium tomatoes pureed
- 1 tsp ginger-garlic paste
- 2 tbsp cashew paste optional for richness
- Β½ tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- Β½ tsp garam masala
- Salt to taste
- 2 tbsp cream or 1 tbsp malai optional
- Fresh coriander leaves for garnish
Instructions
Step 1: Blanch or Steam Vegetables
- Wash and chop all vegetables.
- Boil or steam carrots, beans, cauliflower, peas, and potatoes until tender but firm. Set aside.
Step 2: Prepare the Gravy
- Heat oil or ghee in a pan.
- Add chopped onions and sautΓ© till golden brown.
- Add ginger-garlic paste and cook for 1β2 minutes.
- Add tomato puree and cook till oil separates.
- Mix in turmeric, chili powder, coriander powder, and salt. Cook for 2β3 minutes.
- Add cashew paste (if using) and a little water. Let the gravy simmer.
Step 3: Mix and Cook
- Add the cooked vegetables and paneer cubes to the gravy.
- Mix gently and cook on low flame for 5β7 minutes.
- Add garam masala and cream. Stir well.
- Garnish with chopped coriander.
