- 500 g mutton bone-in
- 2 tbsp mustard oil or ghee for a milder taste
- 1 cup curd yogurt, whisked
- 1 tbsp ginger-garlic paste
- 1 β2 bay leaves
- 2 β3 cloves
- 2 green cardamoms
- 1 black cardamom
- 1- inch cinnamon stick
- 1 tsp cumin seeds
- 1Β½ tsp Kashmiri red chili powder for color
- Β½ tsp regular chili powder for heat
- Β½ tsp turmeric powder
- 1 tsp fennel seed powder saunf powder
- Β½ tsp dry ginger powder sonth
- Salt to taste
- 2 cups warm water
- Chopped coriander leaves for garnish optional
Instructions
Step 1: Prep the Mutton
- Wash the mutton and pat it dry. Set aside.
- In a bowl, mix the whisked curd with turmeric, fennel powder, dry ginger powder, and a pinch of salt.
Step 2: SautΓ© the Spices
- Heat mustard oil in a heavy-bottomed pan. Let it smoke slightly to remove rawness.
- Lower the heat and add cumin seeds, bay leaves, cloves, cardamoms, and cinnamon.
- SautΓ© for a few seconds until aromatic.
Step 3: Brown the Mutton
- Add the mutton pieces and sear on high heat for 6β8 minutes until browned.
