Ingredients
For Chicken Marinade:
- 500 grams chicken bone-in preferred
- ½ cup thick yogurt curd
- 1 tsp ginger-garlic paste
- 1 tsp red chili powder
- ½ tsp turmeric powder
- Salt to taste
For the Korma Gravy:
- 2 medium onions thinly sliced
- ¼ cup oil or ghee
- 2 tbsp cashew nuts or almonds soaked
- 2 tbsp fresh cream or malai
- 1 tsp garam masala
- ½ tsp cardamom powder
- 1 bay leaf
- 2 –3 cloves
- 1 small piece of cinnamon
- 2 –3 green cardamoms
- 1 –2 tbsp rose water or kewra water optional for aroma
Instructions
Step 1: Marinate the Chicken
- In a bowl, mix chicken with yogurt, ginger-garlic paste, chili powder, turmeric, and salt.
- Cover and refrigerate for at least 30 minutes (or up to 2 hours for best flavor).
Step 2: Prepare the Onion Base
- Heat oil or ghee in a heavy-bottomed pan.
- Add bay leaf, cloves, cinnamon, and cardamoms. Sauté for a few seconds.
- Add sliced onions and fry until golden brown.
- Remove a few tablespoons of fried onions for garnish.
- Grind the rest into a smooth paste once cooled.
Step 3: Cook the Chicken
- In the same pan, add the marinated chicken and cook on medium flame for 10–12 minutes until it starts releasing oil.
- Add the ground onion paste and soaked cashew paste. Mix well.
- Cover and cook on low heat for 15–20 minutes, stirring occasionally.
- Add cream, garam masala, cardamom powder, and kewra water. Cook for another 5 minutes.
Step 4: Garnish & Serve
- Top with reserved fried onions and fresh coriander.
- Serve hot.
