Ingredients
Mixed Vegetables (chopped & parboiled):
- ยฝ cup carrots
- ยฝ cup green beans
- ยฝ cup cauliflower florets
- ยฝ cup green peas
- 1 potato cubed
- 1 capsicum sliced
For Kolhapuri Masala:
- 1 tbsp grated dry coconut
- 1 tbsp sesame seeds
- 1 tsp poppy seeds optional
- 1 tbsp coriander seeds
- 1 tsp cumin seeds
- 1 tsp fennel seeds
- 5 โ6 dry red chilies
- 1 tsp black peppercorns
- 2 cloves
- 1 small cinnamon stick
For Curry:
- 2 onions finely chopped
- 2 tomatoes pureed
- 1 tbsp ginger-garlic paste
- ยฝ tsp turmeric
- 1 tsp red chili powder
- Salt to taste
- 2 tbsp oil or ghee
- Fresh coriander for garnish
- Water as needed for gravy consistency
Instructions
Step 1: Prepare Kolhapuri Masala
- Dry roast all the masala ingredients on low flame until aromatic.
- Cool and grind into a fine powder. Store extra in an airtight jar.
Step 2: Cook the Vegetables
- Boil or steam the mixed vegetables until 80% cooked. Set aside.
- Heat oil in a pan, add chopped onions, and sautรฉ until golden brown.
- Add ginger-garlic paste and cook until the raw smell goes.
- Add turmeric, chili powder, and 2 tablespoons of Kolhapuri masala.
- Mix in tomato puree and cook until the oil separates.
- Add the boiled vegetables, salt, and some water. Mix well and simmer for 10โ12 mins.
- Adjust spice and water as needed. Let the curry thicken slightly.
Step 3: Garnish & Serve
